| Banana
and Berry Creme Brulee |

| Ingredients:

| 250ml
semi-skimmed milk |
| 2
egg yolks |
| 3
tablespoons caster sugar |
| 1
large banana |
| 100g
berries or your choice |
| Fresh
mint, to garnish (optional) |

| Method: |
- Preheat oven to 140 degrees celsius
- Warm the milk in a saucepan until almost boiling and set aside to
cool.
- In a separate bowl beat the egg yolks with 1.5 tablespoons of the
sugar until the mixture becomes pale.
- Slowly beat in small amounts of the warm milk until it is all incorporated.
Set the custard mixture aside.
- Slice the banana thinly and divide between 4 ramekin dishes, reserving
12 slices for later. Divide the berries in thr same way, reserving 8
for garnish.
- Pour the custard mixture over the fruit and place the ramekins in
a baking pan. Add water halfway up the sides of the dishes and bake
for 1 hour or until the tops are golden. Cool in refridgerator until
ready to serve.
- When ready to serve, top each ramekin with a few slices of banana
and spirnkle lightly with the remaining sugar. Melt the sugar under
a hot grill or using a chef's blowtorch.
- Garnish with remaining berries and mint and serve immediately.
