Berries in a mint syrup
serves 6  
   
Ingredients:
600g seasonal berries - try using berries of various colours and flavours ie. raspberries, currants, blueberries, strawberries etc
2 stalks mint, washed
4tbsp golden caster sugar
a little hot water (boil then leave a few minutes)
 
Method:
  1. Put the mint (stalks and all) and sugar into a clean jam jar and bash vigorously with the handle of a wooden spoon until the mint is thoroughly crushed and the sugar has taken on a green hue.
  2. Add a enough hot water and to dissolve the sugar and stir well.
  3. Cool and chill for at least an hour or until ready to serve.
  4. When ready to serve, husk and hull your chosen selection of berries, halving larger fruits such as strawberries and arrange in a bowl. Pass your mint syrup through a fine sieve and drizzle sparingly over the berries.
