| Ingredients:

| 125g
blackcurrants, washed, stemmed (you may also wish to top and tail large
fruits) |
| 125g
redcurrants, washed, stemmed (you may also wish to top and tail large fruits)

raspberries |
| 4
egg yolks |
| 50g
caster sugar |
| Grated
zest of one orange |
| 210ml
reduced fat creme fraiche |

| Method: |
- Preheat the oven to 220°C.
- Place the fruit in a large shallow ovenproof dish and set aside.
- In a mixing bowl, beat the egg yolks and sugar until light and creamy.
- Add the orange zest and creme fraiche and mix well then pour mixture
over fruit.
- Place dish on baking tray and bake for 15-20 minutes until golden
brown. Serve immediately.
