Mixed Berry Gratin

Ingredients:
125g blackcurrants, washed, stemmed (you may also wish to top and tail large fruits)
125g redcurrants, washed, stemmed (you may also wish to top and tail large fruits)
125g raspberries
4 egg yolks
50g caster sugar
Grated zest of one orange
210ml reduced fat creme fraiche
 
Method:
  1. Preheat the oven to 220°C.
  2. Place the fruit in a large shallow ovenproof dish and set aside.
  3. In a mixing bowl, beat the egg yolks and sugar until light and creamy.
  4. Add the orange zest and creme fraiche and mix well then pour mixture over fruit.
  5. Place dish on baking tray and bake for 15-20 minutes until golden brown. Serve immediately.
