Blackcurrant Cordial
   
   
Ingredients:
700g blackcurrants
1.3kg sugar
1.7 litres water
1/2 cup white vinegar
 
Method:
  1. Boil the blackcurrants in 600ml of water until soft then strain well through a sieve or cheesecloth.
  2. Boil the sugar in the remaining water then add the blackcurrant juice and return to the boil.
  3. Add the white vinegar and pour into sterilised bottles, overflowing slightly to prevent mould forming on top of juice.
  4. Dilute to taste with hot or cold water.
