Bramble Clafoutis
serves 4  
   
Ingredients:
500g brambles
2tsp sugar
100g caster sugar
125g plain flour
3 eggs, lightly beaten
300ml semi-skimmed milk
30g icing sugar
A little polyunsaturated margarine, for greasing
 
Method:
  1. Preheat oven to 180°C
  2. Lightly grease a 25cm diameter round or 25x20cm rectangular, ceramic or tin baking dish.
  3. Rinse the berries and toss in 25g of the sugar while still slightly wet. Spread evenly in baking dish.
  4. Sieve the flour, salt and remaining caster sugar into a mixing bowl. Make a well in the centre and pour in the eggs. Mix well, drawing in the flour from the sides. Next, add the milk a little at a time, beating until you have a smooth batter. (You can also make the batter by whizzing the ingredients in a food processor until smooth.)
  5. Pour the batter over the fruit and bake in the oven for approx. 35 minutes until lightly browned and puffed up. Serve warm, dredged with icing sugar.
