Bramble Lemonade
serves 2  
   
Ingredients:
6 lemons, juice and grated zest, plus 1 to serve
4tbsp unrefined sugar
400ml soda water
2 handfuls brambles
 
Method:
  1. Place lemon juice and zest in a jug with the sugar. Cover with just-boiled water and stir until sugar has dissolved.
  2. Leave to cool then strain into a large jug and add sparkling or soda water to the 500ml mark. Add a couple of generous handfuls of brambles and a sliced lemon and leave to infuse in the fridge for up to an hour before serving.
  3. Taste before serving and add extra sugar/lemon/water to taste.
