Gooseberry Ketchup

makes approx. 1 pint

 
   
Ingredients:
1 kg under ripe gooseberries, minced
2 cloves garlic, minced
1tsp salt
1tsp cayenne pepper
1tbsp mustard seeds
1.5 pints white malt vinegar
300g demerara sugar
125g sultanas
 
Method:
  1. Simmer all ingredients together for 30 minutes then pour into sterilised jars.
  2. Delicious served with grilled or barbequed mackeral.
