Soft Fruit Salad      
serves 4  
 
Ingredients:
500g mixed berries, fresh or defrosted (for example, strawberries, raspberries, cherries, redcurrants, blueberries, brambles, blackcurrants
50g sugar
Rind and juice of 2 oranges
100ml water
 
Method:
  1. Wash and hull the berries and stone the cherries, if using.
  2. Using a potato peeler, take a few large strips of the orange rind and put these in a pan along with the sugar, orange juice and water. Heat gently until the sugar is dissolved and then boil for 3 or 4 minutes.
  3. Remove the orange rind from the syrup and if using cherries, redcurrants or blackcurrants, add them to the hot syrup. Leave to cool.
  4. Add the remaining fruit and serve.
